Gluten-Free Chapatis, aka “Tortillas, with Chef Laxmi Mason

A couple day ago I shared the original wheat Tortillas made by chef Laxmi, here at The Raj Ayurveda Health Center in Iowa, where I have been staying all week getting an education in Ayurvedic health. Today, as promised, I am sharing with you the gluten-free version that is made with nutritious mung beans. (video below).

First, what are mung beans?

The mung bean, alternatively known as the moong bean, green gram, or mung Sanskrit मुद्ग / mudga, is a plant species in the legume family. The mung bean is mainly cultivated in India, China, and Southeast Asia. (wilkepedia)

Basically mung beans are an ancient superfood that have been eaten for centuries by health conscious cultures aware of their many nutritional benefits.

1 Tablespoon (13 grams) of green mung beans contains 3 whopping grams of protein + 8 grams of carbs (of which 2 grams is fiber), + zero fat.

Mung beans are also believed to have anti-agin properties.

Nutritious + beautifying = Win. Win.
